I usually work as a butcher staff member in the production and sales department. There are many unusual tools in the meat processing room at my workplace, so today I would like to introduce one of them to you.
This time I would like to introduce you to a boning knife.
Boning refers to the process of removing bones. The top one is a knife used overseas, and the bottom one is a knife used in Japan. Broadly speaking, it is classified as a bone knife.
The ones made overseas are curved, so they can precisely scrape the meat off the bones. Both are thick and durable and can be used for multiple purposes.
The Japanese ones have a sharp tip and are suitable for quick movements. Because they have jaws, they can also drop bones.
Winter camping is popular these days, but I think the boning knife is a well-balanced knife that can also be used outdoors.
