Starting this year, Till's has added thick-sliced tonkatsu to its weekday menu.
Each piece of this pork cutlet weighs 250g, and the meat, flour, egg, and breadcrumbs are all sourced from the farm.
Furthermore, the chef at Til's makes lard for the frying oil, and takes a long time to cook the thickly sliced meat.
Fry slowly and slowly. The finished pork cutlet should be about 3cm long from the plate.
