The komatsuna grown at Ark Farm is a variety called "Kahoku."
This variety grows quickly even in low-temperature seasons, and incorporates the firmness and good taste of bok choy.
The sweetness and softness of the stems make it excellent for stir-fry and stir-fry dishes.
Currently, we sell it at the farm market and use it at Yamabatobin and our own restaurants, but most of the harvest is shipped to the Iwate Co-op (in the Morioka area).
