Today I would like to talk about white mold Calpus.
Karpas? I'm sure some of you may be wondering this, so I would like to briefly explain Calpas.
The original meaning is the Russian word karbasa which means "sausage". In Kalpasa
It is a sausage that has become familiar to everyone with the Japanese word "karpas" because it gives off a dry image.
Now, our Shirokabi Calpas is made from 100% Tategamori Plateau pork, and is made from 3 parts of pork, pork belly, thigh, and belly.
Add ginar spice, stuff it into pig intestines, soak it in bacterial species (the source of white mold), and leave it in a low-temperature aging room for about 30 days.
