Today I would like to talk about white mold Calpus.
White Mold Calpas is made from 100% Tategamori Plateau pork, using three cuts - shoulder, thigh, and belly - mixed with original spices and stuffed into pork intestines. The pork is then soaked in a fungus (the source of white mold) and left to mature in a low-temperature maturation room for about 30 days while the mold grows and it is dried, before being delivered to customers after a time-consuming and laborious process.
I recommend slicing it as thin as possible and eating it as is with alcohol. I think it goes well with wine or sake.
First, try it as is and then find a drink that goes well with it.
