Hogget refers to lamb and mutton that are raised for 12 to 24 months, and is not imported from overseas. In some countries and regions, the distinction between hogget and mutton is difficult to understand, so it is treated the same as mutton, and even in countries where hogget is distributed, it is not used for export. 99% of the lamb distributed in Japan is imported, so hogget may not be familiar to you.
The lamb meat distributed in Japan is imported from 99%. Domestic lamb meat is very rare and hard to obtain.
The sheep from the Tategamori Plateau are the "Suffolk" breed. This breed originated in England and is especially valued for its meat. The amount of sheep produced in Japan is very small, and it is characterized by its mild, flavorful red meat and sweet fat. Due to its tender meat, it is also used as a premium ingredient in French cuisine.
During the finishing stage, which determines the quality of the meat, the sheep are fed a blend of 100% herbs produced on our farm, which is specially designed for Tategamori Plateau sheep.
Raising sheep on a large pasture is not easy, but they are cared for with love by checking the condition of the grass and moving them to another pasture so that they can eat the grass without any problems, and the staff check on their health every day to see if any sheep are injured or unwell.
As mentioned above, the Tategamori Highland lamb, which has been carefully selected for its breed, feed, and breeding method, is soft and odorless, so we recommend eating it in a simple cooking method. You can enjoy it as shabu-shabu, or sprinkle a little salt on it and saute it!
The next sale of lamb is scheduled for January to February 2025. Lamb is low in calories and rich in B vitamins and vitamin E, so it is said to be effective for dieting. Even if you eat a lot, it may be zero calories (lol).
