How are you doing while the damp heat continues?

Have you heard of Ark Tategamori's pandelou, which uses plenty of old eggs? Pandelou is a traditional sweet that originated in Portugal.

About 25 years ago, when our chairman went to Portugal for an observational training program on egg sweets, he received a recipe from a famous confectionery shop where he did his training. After repeated trial and error, the product was born a few months later.

Portugal has long been famous for its sweet egg sweets, made with lots of sugar, such as castella cakes, egg somen noodles, egg tarts, etc. The chairman had always wanted to make egg sweets.

This semi-baked castella cake makes the most of the flavors of the ingredients, including southern wheat from Iwate Prefecture, granulated beet sugar from Hokkaido, and 15 "mukashi tamago" (old eggs) from free-range farmed eggs from Ark Tategamori.

When you cut into it, the dough drips out, and it is baked half-cooked, giving it a rich, delicious, eggy flavor.
