I would like to tell you about our new product, "Hambon de Paris".
"Hambon de Paris" is a ham made from thigh meat. It is larger than loin ham, and because it is not smoked, it has a moist and soft texture.
"Hambon de Paris" uses thigh meat with the bone removed, which is then cut open to remove the bone and reshaped into a tube. Normally, a binding agent is used to hold the shape, but at our ham workshop we don't use one, so it was difficult to figure out how to make the meat stick. When injecting the marinade inside, we do so carefully, taking into consideration where we are injecting it. After a long marinade period, the meat is placed in a cylindrical mold to maintain its shape, and then tied with string. We tie it carefully to finish the process so that it does not lose its shape.
After repeated trial and error to check the consistency and taste, we have now produced a product that we can deliver to our customers.
