This is "Knochenshinken" from Tategamori Kogen pork!
On the day of the meal, we will cut it up so that it is easy to eat, but just by looking at it, it is so impressive!
We use bone-in thigh meat from Tategamori Plateau pork, marinate it in a seasoning liquid for about a month, and then mature it.
It is the highest quality ham that has been carefully smoked \(^^)/
