Today, we will be talking about the thigh meat block introduced in "Arashi ni Shiyagare".
Let me give you a brief introduction.

The additive-free char siu block from Fukushimaya, a specialty supermarket in Tokyo, uses pork from Tategamori Ark Farm in Iwate Prefecture. We have had a long relationship with Fukushimaya for about 30 years.
From a butcher's perspective, thigh meat is characterized by its strong flavor and sweetness.
Fukushimaya's original raw soy sauce is said to be a richly aromatic soy sauce that is not heat-treated.
Use it for sauce.
The raw soy sauce is mixed with rock salt from Mongolia and organic sugar.
Pork tied with string is marinated for three days.
After simmering slowly for about two hours, it's ready.
The umami, saltiness, and texture are all well-balanced.
