Today I would like to introduce some rare vegetables grown at Tategamori Ark Farm.

The vegetable on the left is beets.
Contains potassium, magnesium, dietary fiber, and many other nutrients.
It has a distinctive red color and looks great when added to soups or thinly sliced into salads.

The one on the right is a vegetable called chayote.
A large quantity can be obtained from one plant. If you slice it thinly raw, you can enjoy the crunchy texture.
The fruit is eaten, but last year I learned from a senior that the stems and vines can also be eaten, so I tried frying them with garlic and soy sauce and was hooked on how delicious they were (lol).
